Simple Banana Bread with Pecans and Walnuts

One of my favorite breakfast treat is the banana bread because it pairs well with my morning coffee and I just love bananas. When I would drive into work pre-pandemic era, I would stop by Caribou Caribou and order a large Vanilla White Mocha (hot) along with a slice of banana bread. If I’m recalling correctly, a slice at the time was $3 or $4 which was pretty expensive for an “okay” bread.

Looking back, the lack of taste was probably due to how fresh the bread was. Now that I make my own, I’m experiencing firsthand how much better the banana bread tastes with aging. Banana Bread with Pecans and Walnuts

Ingredients

  • 1/2 cup of unsalted butter

  • 3/4 cup of granulated sugar

  • 3 ripe bananas

  • 2 large eggs

  • 1 1/2 cup of all-purpose flour

  • 1/2 tsp of salt

  • 1 tsp of baking soda

  • 1/2 cup of walnut pieces

  • 1/2 cup of chopped pecan

  • 1/2 tsp of vanilla extract

Directions

  • Start with heating the butter in a mixing bowl for 20 secs to soften then add in 3/4 cup of sugar. Mix ingredients together nicely.
  • Add in bananas and mash into mixture.
  • Add two eggs into mixture and stir well.
  • In a separate mixing bowl- add flour, salt and baking soda. Mix well.
  • Slowly add flour mixture into banana mixture and stir well.
  • Then add in pecans and walnuts, stirring well.
  • Carefully pour batter into a nonstick loaf pan (I still like to spray my nonstick pans with cooking oil to ensure easy removal of baked good).
  • Put it in the oven for 50 mins then remove and let it sit for at least 10 mins before slicing and serving.

Notes

  • Strangely, this bread tastes better with each day that passes
  • Storing in a tightly sealed Tupperware should suffice for freshness
  • Feel free to omit the nuts or lessen the amounts
