These chicken tacos are not only refreshing but simple to make as well! I love that despite the tortillas being fried, the combination is light but still fulfilling. That can be attributed to the added veggies, especially the avocados.
I serve the avocados on the side but it’s really intended to be added into the tacos so that you can taste it with every bite. Of course the lime is necessary as well, I squeeze a wedge into each taco for the perfect savory and citrusy taste!
I did omit sour cream and hot sauce with these tacos simply because I enjoyed the flavors as it was but feel free to add as you see fit! If you’re in the mood for steak rather than chicken and have more time to spare, check out my Birria Tacos recipe.
Simple and Refreshing Chicken Tacos

2 chicken breasts
Flour tortilla
Cilantro, chopped
Grape tomatoes, sliced
Red onions, diced
Avocado, sliced
Lime, wedges
Shredded cheese
- Seasonings for chicken:
2 tsp of olive oil
1 1/2 tsp of sugar
1/2 tsp of salt
1 tsp of garlic powder
1/4 tsp of onion powder
1/4 tsp of paprika
1/4 tsp of oregano leaves
1/8 tsp of black pepper
Directions
- Start with prepping the chicken, rinse well and cut into halves if they are too thick. This will allow for the chicken to thoroughly cook. Place into a large mixing bowl or container.
- Then season the chicken with olive oil, sugar, salt, garlic powder, onion powder, paprika, black pepper and oregano leaves.
- Cover with lid and shake well.
- Add 1 tbsp of vegetable oil to large nonstick pan heating over medium. Cook on one side for 5 mins or until golden brown.
- Then flip and cook for an additional 5 mins or until golden brown.
- Once the chicken is cooked, remove from pan onto a cutting board to fork through and shred.
- Put the shredded pieces of chicken in a bowl and set aside.
- Heat a large skillet over medium-low heat and add about 1/4 cup of vegetable oil (I ended up using the same pan used for the chicken which worked just fine). Add in 3 flour tortillas, folded in half and cook for about 1 min or so.
- Flip and cook the other side for an additional minute.
- Once cooked, transfer to plate layered with paper towels.
- Now it’s time to prepare the tacos! Start with adding the chicken into the taco, sprinkle cheese, add red onions, cilantro and tomatoes. Then serve it with a side of avocados and lime wedges. Enjoy!
