Super Easy Shrimp Stir Fry with Spinach and Onions

This super easy shrimp stir fry is a win for a quick fix but who would have thought adding spinach would give the dish an additional robust of flavor! Whenever I hear the word “spinach”, a childhood character instantly comes to mind. Can you guess who? That’s right, Popeye! Spinach was the food that fueled Popeye by making him muscular and strong. This is the same story I tell my 3 year old and it works, he eats spinach without any issue!

Of course it helps that it’s incorporated into a tasty cha (stir fry in Khmer). Thankfully, my go to meal when I need something quick and easy is a simple stir fry. I grew up eating lots of different chas and it was always a dish that I had no issues with. My mom was really good at switching up the meats and vegetables which made it hard to get tired of eating.

As a mother myself now, I have also mastered the various stir fries I can cook for my family when time is limited. The amount of meats and vegetables that can be substituted for one another is incredible! Now if you’re looking for one with a healthy and leafy vegetable, this is a great one to try!

Shrimp & Spinach Stir Fry

Ingredients

  • 1 lb of shrimps, peeled and deveined

  • 4 1/2 oz of spinach

  • 1/4 of a red onion, chopped

  • 2 tbsp of vegetable oil

  • 1/2 tbsp of fried garlic

  • For the seasoning:

  • 3/4 tbsp of soy sauce

  • 1/2 tbsp of fish sauce

  • 1 1/2 tsp of sugar

  • 1/8 tsp of black pepper

Directions

  • Preheat large skillet over medium-low heat, adding in vegetable oil. Allow it to heat for 2 mins then add in fried garlic and stir well.
  • Add the shrimps, stirring it around then add in the seasonings listed above.
  • Add in the onions and spinach.
  • Cook for a minute or two, stirring occasionally.
  • Remove from heat and serve with rice, enjoy!
