Easy Loaded Casserole w/ Potatoes & Chicken Ranch

When I’m pressed for time and my family needs a hearty meal, I turn to this easy loaded casserole with chicken and potatoes covered in ranch. This is definitely a family favorite recipe in our home. We love the flavors it packs from the ranch to the melted cheese and diced green onions, so good!

There’s something about onions that makes them complement dishes so well. I’m sure it’s the soft, sweet taste that it brings. There is no complaint about this meal and the best part about it is that it is a QUICK FIX!

24 hour days just isn’t long enough for me! I have to admit, it’s nice having nights where dinner doesn’t require me to be on my feet for long. Even better- I’m able to get other things done all while the food is cooking!

Ingredients

  • 4 medium russet potatoes, diced

  • 3 small stalks of green onion, finely chopped

  • 1 large chicken breast, chopped

  • Broccoli florets (optional)

  • 3/4 cup of shredded cheese (cheddar jack, fine cut)

  • Seasoning (for potatoes):
  • 1/4 cup of ranch

  • 1 tsp of garlic powder

  • 1/2 tsp of sea salt

  • 1/4 tsp of paprika

  • 1/4 tsp of oregano

  • 1/8 tsp of black pepper

  • Seasoning (for chicken):
  • 1/4 cup of ranch

  • 3/4 tsp of sugar

  • 1/2 tsp of garlic powder

  • 1/4 tsp of salt

  • 1/4 tsp of onion powder

  • Sprinkle of black pepper

  • Sprinkle of Kick’n Chicken

Directions

  • Preheat oven to 450 degrees. Spray a large baking dish (9×13 in, 3 qt) with nonstick cooking oil.
  • Prepare potatoes by peeling and dicing into medium-size cubes, toss into a large mixing bowl.
  • Add the ranch dressing plus remaining seasonings with potatoes and mix well.
  • Transfer the potatoes into a baking dish and evenly spread out to ensure proper cooking. (Save mixing bowl for chicken)
  • Bake the potatoes for 30 minutes making sure to stir it every 10 mins.
  • In the meantime, prepare chicken by chopping into small pieces.
  • Then add the chopped chicken into the same bowl used for the potatoes and add its seasonings then set it aside for marination.
  • After the potatoes have cooked for 30 mins, carefully remove the baking dish from the oven then reduce the heat to 400 degrees. **DISH IS VERY HOT!!** Add the chicken to the baking dish placing carefully on top of the potatoes.
  • Then carefully cover dish with aluminum foil. **DISH IS VERY HOT!!
  • Bake for 20 mins or until chicken is cooked.
  • Carefully remove dish from oven and top with shredded cheese and green onions. Place dish back in oven and cook for 8 mins or until cheese is melted.
  • Remove from oven and let it cool for a few mins then serve, enjoy!
