Easy Poppin’ Jalapeño Crab Poppers

I never been a big fan of jalapeño poppers until I had the jalapeño crab poppers. After taking several months off to focus on my business, I am back and keeping my first recipe simple. Let me remind you though that simple can be just as tasty as the more complex recipes. Ever since I got a taste of these delicious appetizers a few months ago, I can’t stop making them!

Now I don’t like the taste of actual crab meat so I do use the imitation crab which is really fish, Alaskan Pollock to be exact. Something about the blend of pollock mixed with the cheeses and spice of the jalapeño peppers makes this my absolute favorite app! I like to make these for game days or when I feel like eating something light and spicy.

As I continue to get older, my taste buds has been craving everything spicy so I like to leave on as much of the seeds as I can. If crab meat or fish isn’t your thing then omitting it from the recipe is fine as well. I do want to remind you however that you shouldn’t knock it before you try it! I went many years of my life missing out on amazing food simply because I wasn’t as open minded as I could have been so don’t be me!

Simply Delicious Jalapeño Crab Poppers

Ingredients

  • 8 jalapeno peppers, sliced in halves

  • 4 imitation crab meat, thinly sliced

  • Panko bread crumbs

  • Filling:
  • 8 oz of cream cheese

  • 1/2 cup of shredded cheese

  • 1 tbsp of parmesan cheese

  • 1/2 tsp of garlic powder

  • 1/4 tsp of onion powder

  • 1/4 tsp of salt or sprinkle to taste

  • Sprinkle of black pepper to taste

Directions

  • Preheat oven to 400 degrees.
  • After rinsing the jalapeños, slice peppers in half and scoop out membranes using a small spoon then set aside.
  • In a mixing bowl, add the sour cream and microwave for a few seconds to soften it up. Then add the remaining ingredients for the filling- shredded cheese, parmesan cheese, garlic powder, onion powder, salt and black pepper.
  • Add in the imitation crab and mix well.
  • Line a baking sheet with aluminum foil and place the poppers on top filling each one with the mixture.
  • Sprinkle with bread crumbs then place into oven for 25 mins.
  • Remove and let sit for a few minutes to cool before enjoying. Bon Appetit!

Notes

  • If you like it spicy, don’t wash away all of the seeds
