My go-to side for a morning meal are these flavorful breakfast potatoes! It complements many different dishes and it’s also perfect for a breakfast bowl. It has the right amount of seasoning, crisp and softness that we can all appreciate!
My family love these potatoes and we have it at least once a week. It can easily be paired with sausages, eggs, bacon and/or toast. You can switch it up however you prefer, go ahead and give it a try!
Breakfast Potatoes

3 russet potatoes
2 tablespoons of olive oil
1 1/2 tsp of Garlic powder
1 tsp of Sea salt
3/4 tsp of ground paprika
1/2 tsp of oregano leaves
2/8 tsp of black pepper
Directions
- In a large bowl, add cold water and soak potatoes. Then peel skin off then cut into cubes. Add potatoes back to bowl with fresh cold water and allow it to soak in order to remove excess starch.
- Drain water and rinse potatoes then add seasonings, mix well.
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Add potatoes making sure to evenly spread far enough apart to ensure proper cooking.
- Bake for 25 mins then flip potatoes and turn heat to 400 degrees, bake for another 25 minutes.
- Remove from stove and serve as a side for breakfast or make a breakfast bowl.
