If you need a little more razzle to your pancakes then try this simple recipe for fluffy pancakes with strawberries. My childhood recollection of pancakes comes from an Eggo box or McDonald’s breakfast, whomp whomp. So as you can imagine, I was not a big fan of pancakes until I got a little older. As I started to explore cooking, I began to make my own pancakes to satisfy my particular taste buds and it soon became a breakfast favorite.
I love my pancakes moist and airy with the right amount of sweet. I also prefer mines with fruit toppings, strawberries being the most commonly used. Fluffy Pancakes

2 cups of Pancake mix
1 large egg
1 1/2 cup of milk or water
1/4 cup of vegetable oil
2 tbsp of sugar
1 tsp of vanilla extract
1 tsp of cinnamon
Directions
- Start by adding the flour into a mixing bowl and removing any clumps.
- Add the remaining ingredients and mix well.
- Allow the batter to sit for at least 10 mins.
- Preheat griddle to 300 degrees, spray with nonstick cooking oil.
- Pour 1/4 a cup of batter onto griddle, I usually make 3 at a time.
- After 2 mins, flip and cook for another minute or so (these were the Mickey Mouse ones I made for my son).
- Place cooked pancakes onto a plate.
- Then add strawberries onto pancakes and drizzle with syrup then sprinkle with powdered sugar. Serve and enjoy!
Notes
- Use vegetable oil instead of butter in batter to avoid burning since butter burns more quickly
- Use milk instead of water for a richer and fluffier texture
- Always add an egg even if the pancake mix doesn’t call for it, this will add richness to pancakes
