Easy Breakfast Bowl with Bacon and Potatoes

When I’m in the mood for breakfast that is tasty and requires minimal time in the kitchen, I turn to a breakfast bowl. It is packed with proteins and flavors from the crispy bacon to the seasoned breakfast potatoes added with green onions and cheese, so delicious! What’s also nice about this bowl is you can easily switch out the bacon with shrimps or breakfast sausages and it’ll still be equally as tasty. Give it a try for your next breakfast meal!

Ingredients

  • 5 strips of applewood thick cut bacon

  • 5 large eggs

  • 4 russet potatoes

  • 1 stalk of green onion, chopped

  • Shredded cheese, fine cut

  • Seasonings for potatoes:
  • 2 tbsp of olive oil

  • 1 1/2 tsp of garlic powder

  • 1 tsp of sea salt

  • 3/4 tsp of ground paprika

  • 1/2 tsp of oregano leaves

  • 1/4 tsp of black pepper

  • Seasonings for eggs:
  • 1/2 tsp of sea salt

  • 1/4 tsp of garlic powder

  • 1/4 tsp of parsley flakes

  • 1/8 tsp of black pepper

Directions

  • Preheat oven to 400 degrees for potatoes.
  • Chop the potatoes into cubes and place into bowl with cold water, allowing it to sit to remove excess starch.
  • Then drain the water and rinse potatoes with cold water (hot water will activate starch). Add the ingredients listed above and mix evenly.
  • Then line a baking sheet with parchment paper and evenly spread the potatoes.
  • Bake for 25 mins then flip potatoes and increase temp to 425 degrees and bake for an additional 15 mins or until golden with a slight crisp. 
  • While the potatoes are baking, cook the bacon over medium-low heat on a nonstick skillet. I like my bacon crispy so I cook the bacon until it has enough brown on it which also ensures that it’s thoroughly cooked. 
  • When finished, remove the bacon and place over a plate layered with a napkin (this is critical to remove the greasiness) then allow it to sit for a few minutes. Chop the bacon into strips then set to the side.
  • Using the same mixing bowl for the potatoes, crack the eggs into the bowl and add seasonings. Mix well.
  • Preheat a skillet over medium heat and add 1 tbsp of vegetable oil. After 2 mins, pour the eggs into the skillet.
  • Scramble the eggs until it’s cooked with a golden brown.
  • Once potatoes are cooked, carefully remove from the oven and set aside to let it cool off for a bit.
  • Now that everything is cooked, we can put it into our bowls! I start with the potatoes, then eggs, bacon and cheese. If the cheese isn’t melting fast enough then you can put it in the microwave for 30 seconds, adjust as necessary.
  • Then to finish it off, I top it off with the chopped green onions. You can also add a scoop of sour cream if you want to add a level of tanginess and/or a few splash of hot sauce if you’re looking to add some spice. I tend to add spice on the side so that my meals are fully edible by my toddler. Enjoy!
